An omelet is super simple to whip up when you’re short on time. This shrimp omelet recipe is tasty enough to serve to guests at a brunch or lighter dinner. Or just enjoy it all on your own for lunch. I definitely promote using organic shrimp and eggs to make sure they have been produced under slightly better conditions than standard industrial ones.
Cooking time including preparation: ca 15 minutes
Portions: 3-4
Ingredients:
- 250 g peeled raw organic shrimps
- 75 g Philadelphia style cream cheese – I chose a type with black pepper flavor
- 5-6 organic eggs
- 2 tbsp full fat cream
- 1/2 dl milk
- A few sprigs of fresh parsley
- Salt
- Black pepper
- Fat for frying
Preparation:
Fry the shrimps quickly in a pan until they are almost cooked through. Put them on a plate to cool down. Pour off any excess liquid.
Mix eggs, cream, milk, salt and pepper in a bowl. Use a bit less salt than you would for a neutral omelet since both the shrimps and the cheese are salty.
Heat up a frying pan to medium heat with some fat in it. Pour in the egg mix and scrape with a spatula towards the middle a few times for a creamy texture. Lower the heat.
Drop small knobs of the fresh cheese to the surface of the omelet and add the shrimps.
When the omelet is almost ready, chop the parsley and sprinkle it on top.
Serve with a fresh salad.
